Review - The Collins Pub (2005)



Get your mouths ready for a delightful new eatery, drinkery, and spotlight on local law and politics! The Collins Pub in Pioneer Square is a hopping good time, which acts as a magnet for more than just food snobs. In addition to the typical Downtown crowd, the Collins attracts a Law and Order presence ranging from judges, commissioners and prosecutors to local law enforcement bigwigs. A late-afternoon lunch midweek might catch a robe or two relaxing over a martini before returning to their chambers, and a Friday night happy hour is so hopping you’ll have to fight to find a table.

And aside from the atmosphere, chef Addam Buzzalini cooks up a mean meal. The killer lunchtime sandwiches, which have included an open-faced Dungeness crab with portobella and spring greens and a pan-seared ahi with wasabi mayonnaise, are simply to die for. The happy hour menu’s crab cake with spicy black bean sauce and corn paté is mind-blowingly delicious with a Northeast-to-Southeast twist — a nice change from the usual local fare. Lunch and dinner both offer incredible lighter fare like the roasted root vegetable salad with goat cheese and organic baby greens, which is just the right blend of hearty and wholesome. And if you get the chance to chat with the friendly and tattooed Addam, he just might whip you up a special surprise (ALWAYS incredible).

The place also has an awesome selection of beers, both local and from lands afar, and it regularly features rotating taps and some special promotional events like wine-tasting and SuperBowling. Bar service is usually quite quick, despite the potential crowd, and the drinks are strong and the bartenders savvy.

All in all, you will not regret relaxing over a beer at lunch here (for it only seems appropriate to kick back and have a brewski over lunch at this chill spot - after all, even the judges do it!). So get thee to The Collins Pub and enjoy thyself!
